Chocolate Easter Bundt Cake Nest

Chocolate Easter Bundt Cake 🪺 Just so good. This is a super simple tutorial using a grass piping tip. Instead of pulling the tip straight up as you would to create grass you simply pull it across your cake in various patterns until it looks like a nest. You could easily use this method with a store bought Bundt cake for this as well. Recipe below.

Ingredients

(For the cake)

1 cup unsalted butter

2 cups all-purpose flour

2 cups granulated sugar

1 1/2 teaspoons baking soda

2 large eggs

1/2 cup sour cream

1/3 cup quality cocoa powder

1 teaspoon kosher salt

1 cup water

1 teaspoon vanilla extract

(Chocolate Sour Cream Frosting)

½ cup unsalted butter

3.5 oz semi-sweet chocolate, chopped

1 tablespoon unsweetened cocoa powder

2 cups powdered sugar

1 teaspoon vanilla extract or paste

½ cup full fat sour cream, room temp.

pinch of salt

Ganache

*This is for a basic rich chocolate Bundt ganache. If you want to make the nest frosting use frosting recipe above*

1 cup heavy whipping cream

2 cups chocolate chips

Directions

  1. Preheat oven to 350 degrees F. Butter a 10 or 12-cup Bundt and set aside.

  2. In a small saucepan, stir butter, cocoa powder, salt, add water over medium heat until combined. Remove from heat and set aside.

  3. In a large bowl whisk together flour, sugar, and baking soda. Add butter mixture in increments and whisk until completely blended.

  4. Add the eggs, one at a time, whisking until completely blended. Whisk in the sour cream and the vanilla extract. Mix until smooth.

  5. Pour batter into the prepared pan and bake until a toothpick inserted into the center of the cake comes out clean, 40 to 45 minutes. Let the cake cool in the pan for 15 minutes and then invert onto a rack. Let cool completely before frosting.

  6. While the cake is cooling, make the frosting: melt butter and chopped chocolate over low heat in a double boiler (or in microwave at 15 second intervals) until combined.

  7. Add sifted cocoa powder and confectioners’ sugar in small amounts and mix well.

  8. Add vanilla, salt, and sour cream and mix until smooth.

  9. Add frosting to a piping bag fitted with a grass tip and frost in all directions over the Bundt until it resembles a nest. Fill the center with chocolate eggs.
