Peanut Butter Marshmallow Shortbread Bars

I have decided that I no longer want to be an adult. I rather enjoyed building sheet forts, playing with Play-doh, and organizing my sticker collection. Being an adult requires so much moreeeeee. And I'm not just talking about paying bills and scheduling life, but literally just the stress of dealing with people and emotions and relationships and learning how to communicate properly. It's exhausssssting being an adult. It's not nearly as fun as it was cracked up to be. I thought we were supposed to stay up until midnight, eat all the ice cream we wanted ... and use cursive all the time ..... None of this happened. And the closest I ever get to using cursive is drawing a scribble mark on the supermarket credit card machine. Those High School teachers were a bunch of liars I tell you.

Make these 30 minute chocolate peanut butter marshmallow bars. They are super delicious and super quick. And I promise they are everything I cracked them up to be : )

30 minute Chocolate - Peanut Butter Marshmallow Shortbread Bars

Ingredients
(16) Lorna Doone shortbread cookies
1 cup Skippy Natural creamy peanut butter
3.5 oz Marshmallow Cream (1/2 container)
1 bag of high quality Guitarrd's milk chocolate chips

Directions
1. Line a 4" x 12" tart pan with Lorna Doone cookies (or half a small baking sheet)

2. Spread peanut butter over the tops of all the cookies and place in freezer to harden for about 10 minutes.

3. Spread marshmallow cream over the top of the peanut butter and place in the freezer this time for 10 minutes to harden.

4. In a microwavable bowl, melt half of your milk chocolate chips at 30 second intervals, stirring in between, until completely melted. Remove from the microwave and toss in the rest of the chips and let them melt with the heat of the other chocolate. Stir to combine and pour over peanut butter marshmallow shortbread bars. The frozen bars will make the chocolate harden pretty quickly so spread with a spatula once over then let it all set. You can refrigerate for 5 minutes to completely set. Cut into bars and store in the fridge.
