Valentine's Day Fudge

Valentine's Day Shmalentine's Day. I have never actually celebrated Valentine's Day. I don't really like to be romantic. I don't even like fancy dinners. I feel itchy when I go to a fancy dinner. Is that weird? Maybe it's because romantic restaurants are so dark. It's weird when you can't see your food. And then the fancier the restaurant the smaller the portion and the more expensive the meal. I would rather have a Subway sandwich and fudge. Or maybe a fancy dinner at home in pajamas with pepperoni pizza and hot sauce. Mmmmmmmm. Whether you're fancy or not this fudge is delicious and perfectly pink so make some this Valentine's Day ya'll!

Be Mine Valentine Fudge

Ingredients
Valentine Fudge
1 (8 ounce) package cream cheese
4 cups confectioners' sugar
1 1/2 teaspoons vanilla extract
12 ounces white chocolate, chopped
Pink food coloring gel
Red food coloring gel

Directions
1. Grease an 8x8 inch baking dish. Set aside.
2. In a medium bowl, beat cream cheese, sugar, and vanilla until smooth.
3. In the top of a double boiler over lightly simmering water, heat white chocolate, stirring until melted and smooth.
4. Fold melted white chocolate into cream cheese mixture and separate into two different bowls. Add red food coloring gel to half the fudge and pink food coloring gel to the other half. Spread the red colored fudge into the prepared baking dish and chill for 20 minutes. Remove from fridge and spread pink fudge over the top of the red fudge. Chill for one hour then cut into 1 inch squares.
