Chicken Tacos

We made these for dinner and they are easy easy easy. Delicious too. Enjoy.

Chicken Tacos
(Serving for 6)

INGREDIENTS

4 whole Boneless, Skinless Chicken Breasts, (Cut Into bite-size pieces)
Salt, Cumin, Chili Powder To Taste (or Use Taco Seasoning)
2 tablespoons Canola Oil
1 tablespoon fresh lime juice
1/2 tablespoon chili powder
A couple dashes of your favorite hot sauce 
1 1/2 cups Queso Fresco
Red Onion
Avocado
3 Roma Tomatoes Diced
Cilantro
Fresh Lime
Salt and Pepper to taste
Corn Tortillas

DIRECTIONS

1. In a large skillet over medium heat, heat canola oil and add chicken pieces. Then add lime juice, chili powder, salt, pepper, and a couple dashes of your favorite hot sauce. Simmer until chicken is no longer pink (stirring occasionally). Chicken pieces should be nicely browned on top and bottom. (Approx. 15 minutes)

2. Meanwhile, warm the tortillas in the microwave until soft (or even better warm in another skillet so the get a slight color to them). When chicken is fully cooked, transfer to serving bowl. Place tomatoes, cheese, cilantro, avocado, red onion, and maybe even some sour cream in serving dishes. Each person can make their own taco with what they prefer. Make sure to serve with fresh limes. Enjoy!!
