Nothing better than a big leafy salad with an Asian-inspired dressing when you just consumed an entire baking sheet of chocolate saltine cracker toffee. Yes, I have issues ... and a serious sweet-tooth.
This salad requires a lot of healthy ingredients so grab a big bowl and a really cute kid and let's get started!

First add 5 oz of pre-washed mixed greens to your bowl.

Then add 1/2 of an English cucumber, thinly sliced. (Or one entire small cucumber)

Next add 1/2 red onion, thinly sliced.

And 1 cup of halved red and yellow cherry tomatoes.

Next add 1 cup of shelled edamame. (I buy mine frozen and allow them to thaw 10 minutes before)

Add 1 peeled carrot, thinly sliced. Then make scary carrot hand.

And 1/2 an avocado, cubed.

Don't you feel better about yourself already?

Now sprinkle in some sesame seeds. About 1 tablespoon.

And mix the dressing as follows:
1/2 cup seasoned rice vinegar (It will say sweet or seasoned on the bottle)
1/8 teaspoon sesame chili oil
1/4 cup soy sauce

Enjoy!

1/2 avocado, cubed
1 cup red and yellow cherry tomatoes, halved
1 cup shelled edamame
1/4 red onion, thinly sliced
1 carrot, peeled and thinly sliced
1/2 cucumber, halved and thinly sliced
1 box (5 oz mixed greens)
1 tablespoon sesame seeds
